Spinach - Popeye had the right idea

Iron-rich salad hits the spot on warm summer evenings

Cooked spinach sometimes gets a bad rap but in a salad, no one ever complains. The following recipe was developed in the Sunset kitchens and appeared in its Sunset Light & Healthy Cookbook published in 1990. It takes about 20 minutes to prepare, maybe less with pre-washed spinach.

Spinach Salad with Garlic Croutons

Nutritional information: Per serving: 255 calories, 10 g protein, 38 g carbohydrates, 8 g total fat (3 g saturated fat), 11 mg cholesterol, 471 mg sodium
