Celebrate Cinco de Mayo with Tasty Mexican-American Recipes

Cinco de Mayo, the 5th of May, observes the Mexican army's surprising victory over the French at the Battle of Puebla on May 5, 1862. According to Wikipedia: "The Battle of Puebla was important for at least two reasons: First, although considerably outnumbered, the Mexicans defeated a much better-equipped French army. Second, it was significant because since the Battle of Puebla no country in the Americas has been invaded by an army from another continent."

Dear Emily,

As we put back all the "J's" in our references to Mexican Food, we must appreciate that typical Mexican Food in USAmerican is not quite Mexican at all.

So let's look at the Grits Diablo as our local celebration dish for May Day:

Layer the following in a glass rectangle pan:

#1 - Grits with red pepper flakes, steamed to a course structure.
#2 - Layer thin slices of tomatoes
#3 - Layer shaved slices of garlic
#4 - Layer mild Jalapeno slices
#5 - Layer refried beans
#6 - Layer spiced green olives and Hominy
#7 - Layer a thick abundance of Cheeses, focusing on Swiss.
#8 - Coat with a mild salsa and grits mixture

Bake in the oven for 7-10 minutes at 400 degrees F.

Have lots of Beer and cheap wine to wash down the taste.
